Quick + Delicious Meatballs + Sauce

So it’s been a while since I made meatballs and to be honest it’s mainly because I think they will take too much time.

This afternoon I made the meatballs so quick and easy I surprised myself.

I made double the batch coz I totally believe and share this often, cook once, eat twice!

There are all boys in my house and let’s face it, this is gonna be gobbled up..

INGREDIENTS - MEATBALLS

1kg good quality mince (try Gin Gin Grass Fed Beef if your in Perth)

2 eggs

3/4 cup GF breadcrumbs

2 Tablespoons good quality tomato paste

1 Tablespoon sriracha

1 bunch of fresh parsley

Pinch Himalayan salt & pepper

Option - you can add these also, we didn’t in ours though, avoid if following FODMAPS

Finely chopped onion

1 clove garlic freshly minced

1 / 4 cup Parmesan cheese


METHOD

Preheat oven to 180 degrees

Mix ingredients in large bowl

Roll into balls

Pop in oven on tray for about 15 minutes at 180 degrees, or until meatballs are cooked through

Add to finished meatball sauce



INGREDIENTS - SAUCE

1 jar Passata

1 can organic crushed tomatoes

1 - 2 cup of bone broth - we used Gevity (add the amount of broth to get preferred consistency of sauce)

1 teaspoon Italian herbs

1 teaspoon thyme (fresh is best)

1 teaspoon basil (fresh is best)

Pinch Himalayan salt & pepper



METHOD

Add sauce ingredients to saucepan, bring to boil, then simmer

Sauce should start reducing, leave on stove for 20 - 30 minutes

When sauce tastes great and has thickened, your ready to add your meatballs that you cooked in the oven

Serve & enjoy

Serve 4 - 8 people depending on serving size
