Healthy GF Satay Chicken

Our Easter is a bit different this year with social distancing, meaning we can’t see our family, no holiday away and we only had 1 of our children with us but were determined to make the most of it.

Hubby stoked the pizza oven, sending lovely smells through the house and we cranked the stereo with our fav tunes!!

I have to admit hubby created this yummy recipe !

We love holidays in Bali and one of our fav things to eat on a warm arvo with a drink or two is a few satay sticks.

I asked hubby to create a recipe that is healthy so we used the usual ingredients we already have at home. If you have any questions or want to substitute send me a message and we can make suggestions.

Let’s just say our Easter Sunday afternoon felt like we were on holiday!!

Recipe

6 Spring onion whites or 1 brown onion finely chopped (FODMAPS diet use spring onions)

1 tsp Chilli powder

1 tsp curry powder

1 tsp turmeric powder

2 cms lemongrass finely grated

1 tablespoon honey

1 kilo chicken breast

  Steps

Cut chicken into strips

Put the chicken in a bowl with marinade, mix and then pop in the fridge for 1 hour

 Satay sauce

On stovetop add

1 spring onion or brown onion chopped finely

1-2 freshly chopped chilli

1 teaspoon garlic or crushed fresh garlic

2 teaspoons paprika

2 teaspoons turmeric powder

2 teaspoons curry powder

2 cms lemongrass finely grated

2 tablespoons tamari (can use soy sauce if needed and can handle gluten)

1 tablespoon honey

1 teaspoon fish sauce

2 tablespoons macadamia oil (can use peanut oil but macadamia is preferred )

3 tablespoons ABC spread ( or Almond butter if you need)

400g organic coconut cream or milk (depending on the thickness you prefer, we used cream)

1/2 cup water (slowly add and only use the amount of water you want for consistency preferred)

Add half fresh lime juice once the sauce is mixed

 Steps

Simmer sauce on the stovetop for 20 minutes, then put aside

You can cook your satay sticks on a grill pan, bbq. We cooked ours in a pizza oven because we feel the flames underneath give it a more authentic flavor

We added / sprinkled some of the sauce to the skewers just before putting on grill

Ideas

Tweak the ingredients to your liking

E.g if u like hot then add more chilli -

If u like your sauce thinner than use coconut milk instead of cream

Use fresh ingredients such as garlic if you can or a good quality dried herb

We didn’t have fresh lemongrass so used 3 drops of our DoTERRA lemongrass essential oil

*This makes alot so would suit at least family of 4, maybe have leftovers !
