SPINACH & COCONUT SOUP

Oil

1 clove garlic

1 brown onion or 2 – 3 spring onions

1 litre of broth (chicken or vegetable preferably)

½ cup coconut cream

2 – 3 tablespoons fresh Parsley

S & P

 

DIRECTIONS

In medium heat pan add garlic and onion and saute.

After 5 minutes add broth, bring to boil, then reduce to simmer.

Add spinach and cook on simmer for 10 minutes. Add S & P

Remove from pan and blend soup in blender.

Serve in bowl and add parsley
