FRESH San Choy Bow

INGREDIENTS

Coconut oil

2 garlic cloves

5 cm of fresh ginger

500 – 600g of chicken mince

1 teaspoon chilli powder

1 grated carrot

2 tablespoons coconut aminos (can use tamari if needed)

1 tablespoon maple syrup (check the ingredients! It should be clean)

1 tablespoon fish sauce

2 red chillies deseeded and finely chopped

4 – 5 spring onions finely chopped

1 large iceberg lettuce

Handful of mixed nuts (to toast)

Fresh coriander

Fresh mint

2 cups of Bean sprouts

½ fresh lime

 

Method

Heat oil in fry pan on medium heat.

Add garlic, onion and ginger and fry in pan until caramelised.

Add mince, chilli powder, grated carrot and stirfy until golden and mince is cooked. Add tj sauces, syrup and fresh chilli and half the spring onions (I use the whiter ends for cooking and save the dark green for eating fresh) and stirfy for another few minutes until all mixed.

Toast nuts on oven tray for 5 minutes

Arrange iceberg lettuce leaves like cups onto plate and spoon in mixture.

Top with bean sprouts, fresh coriander, fresh mint, spring onions, toasted nuts & squeeze over a bit of fresh lime
