Peppermint Raw Chocolate
Let's face it.. chocolate is a comfort food. When I cleaned up my diet years ago and swapped out processed foods for meals made from scratch with good quality ingredients, the need to find a chocolate that I enjoyed was important !
It is important to use good quality ingredients!!
We now make this once a fortnight to have as a nice treat!
On the stove and thermomix recipe below!
INGREDIENTS:
200g raw cacao butter
50-60g raw cacao powder (or to taste)
60g raw honey or pure maple syrup
1 teaspoon organic vanilla bean paste
Pinch Himalayan salt
5 drops doTERRA Peppermint essential oil
THERMOMIX INSTRUCTIONS:
Place cacao butter into mixing bowl.
Mill 20 sec/speed 8.
Melt cacao butter for 10 mins/37°/speed 2, scraping down sides of bowl with spatula towards end of cooking time to ensure all the cacao butter is melted.
Add remaining ingredients to mixing bowl and continue cooking 10 mins/37°/speed 1.
Mix chocolate 10 sec/speed 5 to blend honey or syrup in, then pour into lined dish or chocolate moulds or onto a tray for a thin chocolate bark.
Place in the freezer immediately to set
STOVETOP INSTRUCTIONS:
Chop cacao butter as small as possible and then put in a food processer or blender of some sort and chop
Get a saucepan to boiling and then pop a glass bowl on top of saucepan but so the bottom of glass bowl isn’t touching the water
Slowly stir the chopped cacao butter until it melts, always stirring
Add all ingredients. Make sure you add the peppermint essential oil. Usually about 5 – 6 drops. We only use about 50grams of honey, as it kept coming out too goey but this is up to you if you would like to add more honey..
Once all ingredients are in, continue to slowly mix together
The chocolate should have a nice sheen to it, glossy and smooth
As soon as its a good runny consistency then either pour into moulds or to create chocolate bark, pour onto oven tray with baking paper
Pop any ingredients on top if you want. I add small bits of paleo granola, goji berries, toasted coconut flakes or chopped nuts
Put in freezer for at least an hour or two
