Haloumi, Kale & Broccoli Salad

So yum! So easy! Hubby makes this for us and we love it!! He loves to eat meat and we find haloumi a compromise of sorts.. This salad is great if your participating in the Improve Yourself Cleanse

1 packet haloumi (find good quality)

1/2 Organic (We pref the purple one when its available) Kale or 2 handfuls of baby spinach

1/2 Broccoli

1 Lebanese cucumber

1/4 red capsicum

1/2 grated carrot

2 large spring onions

Options:

  • Handful Shredded red cabbage

  • 1/4 grated beetroot

Cut ingredients to your preferred size

Add salad dressing of:

3 Tablespoons Organic mayonnaise

3 Tablespoons Apple cider vinegar

1 Teaspoon Dijon mustard

1 Teaspoon cracked pepper

Mix and ENJOY!

(Try and buy organic or from farmers markets when possible, especially the kale as it tastes nicer and less bitter)
